Officially done with an entire week of Whole30 and I'm feeling gooooooood! I feel like when I did this a couple years ago, my life was a mess. I felt like I was constantly cooking. I felt like nothing went smoothly and I was always in a grumpy mood. Maybe it's because this isn't my first rodeo, but it seems to be much easier this time. I think part of that is because of the mindset I went into this Whole30 with.
I didn't go into this to be on a "diet" because I don't view clean eating as a lifestyle change. I decided to do a Whole30 to remember how good it feels to treat my body well. Yes, I eat relatively clean and I'm 80/20 paleo. But I'm also a firm believer in enjoying french fries if you want. Or going out for frozen yogurt after dinner and topping it with an entire pound of rainbow sprinkles if that's what you want. That's how I (and a lot of other people) find balance in life. Unfortunately, my balance scale got a little lopsided and I was enjoying these pretty frequently. I started having cravings more often and I was super lethargic. I have some big goals for 2018 and being super tired all the time isn't going to help me get there. That's why I decided to do a Whole30. I know how good I felt before and I wanted to feel that again. For me, participating in a Whole30 is another form of self-care. Plus, reminding myself how good I feel all the time when I treat my body like I give a damn is exactly what I needed to push forward towards those goals.
One of my goals this year, non-fitness related, is to spend more time doing what makes me happy. There's nothing that makes me quite as happy as cooking and baking in the kitchen. I turn on some music and its a time where I can do whatever I want. I can try new recipes. I can make dinner. I can meal prep. Whatever. I. Want.

As much as I like spending time in the kitchen, I enjoy easy to make dishes just as much! Particularly ones that don't involve a lot of dirty dishes at the end. This sheet pan meal requires just four ingredients and spices. You set your chicken on the pan, surround it with sliced veggies, season it, bake it and voila! You have a healthy, Whole30 meal with just a few minutes prep and one dirty baking sheet. It's pretty fricking awesome.
I use a mixture of zucchini, yellow squash and sweet potato for this dish, but it's easy to customize so if you don't like one veggie, double up on another or sub in something else. It would be great with eggplant, onion or mushroom too! Since it doesn't take too much time or work, you could save this for dinner after a long day at work or make it in advance for lunch throughout the week. - 1 lg sweet potato
- 2 tsp sea salt + addtl to taste
