Dairy Free Walnut Pesto sauce made in just FIVE minutes! Top your spaghetti, pizza or meat with this for a flavorful dish with minimal work.
For a girl who doesn't care much for red sauce, pesto is my hero. I know, I know. Pesto isn't for everyone. But neither is red sauce if you ask me. Pasta, pizza, chicken, you name it and I'll throw pesto on it or in it. I enjoy this pesto recipe in particular because it is dairy free, sugar free, vegan friendly and Whole 30 approved. Plus, it tastes hella good. I say it's the best of all worlds, but I'll let you be the judge.
Usually, pesto is made from pine nuts. But those are really expensive and I just can't justify spending that amount of money on them when you can use other nuts and seeds in pesto and it tastes JUST as good. I use walnuts in this recipe, which are easy to find and inexpensive.
By the way - this pesto goes really well on my Flatbread Pizza. Since that recipe makes 2 separate flatbreads, I like to top one with pesto (for me) and one with red sauce (for Kyle!)
- 3/4 cup fresh basil leaves
- 2 tsp minced garlic
- 1/4 cup walnut pieces
- 1/4 cup extra virgin olive oil
- 1 tsp salt
- 1/2 tsp lemon juice
