Two-Meat Loaf

Somehow, I thought that after the holidays passed, my schedule would clear and the days would slow down. Unfortunately, it seems that was all just wishful thinking on my part. 

Being super busy makes me relish the time I have being able to relax with friends and family. While I love cooking and spending time in the kitchen, when it comes to dinner, sometimes I just want to throw everything in a big bowl to mix and then cook.

This meatloaf recipe has quickly become one of my favorite meals.  Serve it with mashed cauliflower, veggies, or by itself. Any way you choose, you can't go wrong!

Two-Meat Loaf
Pork + beef join together to create a blast of flavor in this Two-Meat loaf recipe with tasty, hidden veggies. Whole30, Sugar Free + Paleo
  • 1 lb ground pork
  • 1 lb ground beef
  • 1 cup fresh spinach, chopped
  • 1/2 cup carrot, shredded
  • 1/2-3/4 cup onion, finely diced
  • 1 egg, whisked
  • 2 tbs almond meal
  • 2 tbs coconut aminos
  • 1 tbs italian seasoning
  • 2 tsp oregano
  • 2 tsp parsley
  • 1 tsp garlic powder
  • 3/4-1 tsp salt
  • 1/2 tsp black pepper
1. Preheat oven to 375.2. Mix all ingredients together in a large bowl. Then transfer it to a lightly greased loaf pan.3. Using the middle oven rack, cook for 50 minutes. If using a glass pan, begin checking after 40 minutes.4. Remove from the stove once the top has started to brown. Let cool for 10 minutes. Slice and share!
